News Release - Councilmember Spaull Helps Cut Ribbon for The Gluten Free Chef Market and Bakery

(Wednesday, June 11, 2014) – City Councilmember Elaine Spaull joined owner Calvin Eaton at a ceremony today to mark the opening of The Gluten Free Chef Market and Bakery, 181 Monroe Ave., which is owned and operated by Mr. Eaton and Blossom Fox.

“I am honored to welcome Calvin and Blossom and the Gluten Free Chef Market and Bakery to Monroe Avenue,” said Mayor Lovely A. Warren. “Together they have found a way to match their passion for food with the growing need for gluten and dairy free products. Add that to the advantages of starting a business in the emerging Wadsworth Square commercial district, and I think it’s clear that they have found a recipe for success.”

Mr. Eaton is a baker who launched his blog, the Gluten Free Chef, in 2012 after years of living with the effects of fibromyalgia, chronic fatigue and celiac disease – conditions that are exacerbated by the presence of wheat, gluten and dairy products in foods.

His goal has been to create fool proof recipes ensuring that everyone could and would eat wonderful gluten free meals - and never tell the difference. Mr. Eaton intends to continue to raise awareness for gluten intolerance by offering his businesses as a hub of information for those struggling with the condition.

“I am always looking to make my gluten free meals as good as or better than their gluten counterparts,” said Mr. Eaton.

Ms. Fox’s interest in cooking began in her mother’s kitchen and continued through an intense 15-month Patisserie and Baking program at The Le Cordon Bleu College of Culinary Arts in Orlando, Fla., from which she graduated magna cum laude. She has since opened a home-based wedding cake business, which helped her refine her artistic talents for cake creation. And she has also worked in various retail locations in the food-and-beverage industry, where she honed her business and management skills.
